The Problem
Jumla is famous for its organic apples. The high-altitude climate, clean air, and rich soil produce some of the best apples in Nepal — sweet, crisp, and naturally pest-resistant.
But the system is broken:
- Post-harvest loss: Up to 40-50% of apples rot before reaching market
- No cold storage: Apples spoil during transport on rough, multi-day roads
- Price collapse at harvest: All farmers harvest simultaneously, glutting the market
- Middlemen capture value: Farmers receive a fraction of the final retail price
- No processing infrastructure: No facility to make cider, vinegar, dried fruit, or other shelf-stable products
The result: farmers work all year for a short, low-profit season. Value that could stay in the community instead leaves it.
The Solution
A community-owned agri-processing hub powered by the micro-grid, managed by trained local operators, and supplied by the collective of apple farmers.
The hub does four things:

The Process
Cold Storage
HARVEST → SORT & GRADE → COLD STORAGE → PACKAGING → SALE
- Apples are harvested at peak ripeness
- Sorted by size and quality (Grade A for fresh, Grade B for processing, Grade C for juice/cider)
- Stored in a cold room (1-4°C, 90-95% humidity)
- Powered by the micro-grid (most energy-intensive in pre-cooling)
- Released to market throughout the year when prices are stable
Cider Production
APPLES → WASH → CRUSH → PRESS → FERMENT → MATURE → BOTTLE → LABEL
- Apples are washed with purified water from the water module
- Crushed into pomace using a mechanical crusher
- Pressed to extract juice
- Juice is fermented with selected yeast strains (or wild fermentation for traditional style)
- Aged in stainless steel or traditional vessels
- Bottled, labelled, and sealed
Products:
- Fresh apple juice (pasteurized, shelf-stable)
- Hard cider (alcoholic, 4-7% ABV)
- Apple wine (higher alcohol, for aging)
- Apple brandy (distilled, after still acquisition)
Vinegar Production
CIDER / JUICE → ACETIFICATION → MATURE → FILTER → BOTTLE
- Cider or apple juice is exposed to acetic acid bacteria (Acetobacter)
- Fermented in surface culture or submerged culture method
- Aged for 3-6 months for complex flavor
- Filtered and pasteurized
- Bottled and labeled
Products:
- Raw apple cider vinegar (unfiltered, “with the mother”)
- Filtered apple cider vinegar (clear, for cooking)
- Flavored vinegars (herbs, chili, honey)
Dehydration
APPLES → WASH → SLICE → TREAT (optional) → DEHYDRATE → PACKAGE
- Apples are washed, peeled (optional), and sliced into uniform rings or chips
- Treated with lemon juice or citric acid to prevent browning (optional)
- Dehydrated at 50-60°C using solar dehydrators or electric dehydrators powered by the micro-grid
- Dried to 15-20% moisture content
- Packaged in sealed bags with oxygen absorbers

- Apple powder (ground dried apples for baking, baby food)

Any farming community anywhere can download, adapt, and build their own agri-hub. A coffee-growing region in Ethiopia can replace apples with coffee cherries. A cocoa region in Peru can process chocolate.
The recipe is free. The knowledge is open. The value stays local.
